Kabocha Squash/Japanese Pumpkin Pancake

Ingredients

150 g Pumpkin (Kabocha/Japanese Pumpkin)

1/2 cup Flour

1 Green Pepper

1 Red Pepper

1 Egg

1 teaspoon Salt

1 teaspoon Ground White Pepper

1 teaspoon Vegetable Oil
Directions
- Wash and peel pumpkin. Cut flesh into strips. Steam until soft.
- Cut red and green peppers into thin strips. Mix steamed pumpkin with flour and egg.
- Add in red and green peppers, pinch of salt and pepper. Mix well.
- Heat a thin layer of oil in a pan. Pour in the mixture. Fry on low heat for a short time for it to solidify.
- Plate, serve, and enjoy!
